INGREDIENTS: A good pinch of salt, 1/2 teaspoon ground turmeric, two teaspoons cumin seeds, one teaspoon paprika (smoked or regular), 500g carrots (peeled and chopped into small pieces), 120ml unsweetened almond milk

1/2 onion, finely chopped, one tablespoon fresh dill

25ml olive oil

400g sweet potatoes (peeled and chopped into small pieces)

100g butter

METHOD:

Fry the onion in the oil for about a minute. Add the potatoes and dill and fry for another minute. Increase the heat to maximum and add some salt. Fry for about 5-10 minutes until the potatoes are brown on all sides. Bring some water to a gentle boil and add salt to a separate pot. INGREDIENTS: 1/4 cup water, 1 Tbsp. Brown sugar, 2 tsp. avocado oil, four small beets (red or golden with skin on), salt and pepper to taste

Makes: 3 servings

METHOD: Preheat oven to 400°F and line a baking sheet with foil. Combine the water and brown sugar in a small bowl, then set aside for about 10 minutes. After 10 minutes, add the oil, then whisk until all ingredients are combined. Cut off the tops of your beets just enough so that you can see its lovely red color inside but still have some protection from being cut through.
